Posted on Posted in Vegetables

Today, I want to share with you how to make Teriyaki corn on the cob.

It’s summer!

we want to have something feel like summer!  For me, it’s summer vegetables.

Like I said in the tempura video, Japanese corn is super sweet and tasty.  And it is available only limited of time, like no other.

It tastes good as it is, but even better when it’s seasoned with soy sauce.  You can find this delicious looking corn on the cob in street vendor in summer festivals.  The smell of the soy sauce grilling on the charcoal is irresistible!

I had been wanted to re-create this at home and I finally made it.  And I found a secret to share with you guys!

If you have a BBQ charcoal grill at your home, you can use it.  Most of the average Japanese people don’t BBQing at home. But we have built-in fish griller in our kitchen. ( proving we eat fish a lot! ) I am going to use fish griller but you can definitely use an oven or toaster oven.

Let’s get start it!

★Teriyaki corn on the cob★

<ingredients>

2 ears corn

1 tablespoon all-purpose flour ( any flour works fine)

1 to 2 tablespoon water

1 tablespoon honey

1 tablespoon soy sauce (regular or Koikuchi)

  1. Peel back corn husks and remove silk. Place in frying pan, sprinkle 2 tablespoons water.  Put the lid on and turn on the heat to medium.  Cook about 5 minutes until all the water evaporated.  ※you don’t have to cook through at this step.  We will finish in the grill.

2.While cooking, let’s prepare the other ingredients.  Mix flour and water to make a batter.  The batter is the secret ingredients!  The consistency is like a tempura batter.   Then, mix honey and soy sauce and set aside.

3.Take out cooked corns onto the rack. Use your fan to dry off the moisture of the surface.

4.Brush the batter onto the entire surface. Grill 1 to 2 minutes until the surface dries out.  Rotate and cook all the way around.  The batter sticks seasonings to the surface.

5.Brush honey and soy sauce mixture onto the surface.  Then cook 1 to 2 minutes until get chared nicely.  Repeat the process until all of the surface is nicely seasoned.

Keep your eye on the corn, it easily burned.

The cooking time is depend on the oven or grill you use.  So easy!

Let’s enjoy with a glass of cold beer!

Actually, I drink beer-like taste beverage, reducing the absorption of sugar.  Became very popular in the last a few years.

The corn tastes so good thanks to the batter.  It holds the seasonings so well.  Sweet and savory, perfect summer taste.

Those who are enjoying BBQ at home, this is a good side dish for sure.

I brash soy sauce over and over again until season well before I found this recipe in a old cook book.

I hope this recipe is helpful for you too!
